Are you looking to get involved in the next big thing?  Here is your opportunity to be part of an Alternative Protein Entrepreneurial Start-up Company.  A venture-backed food company located in Toronto; Canada is seeking a Principal Food Scientist to be part of their fast-growing Product Development team.  In this role, they will work closely with a team of food scientists at the Toronto-based R&D lab & product development kitchen to develop and modify the texture and flavor of plant-based products. The ideal candidate will have a deep understanding of novel food product design and development, with experience in product formulation, sensory analysis, chemistry, structure, food safety, flavor, color, and analysis related to meat and/or alternative meat products.  Must have a Ph.D in Food Science or related field with 5+ years of product development experience in a food and/or food ingredient company, or M.S. with 7+ years of experience or B.S. with 12+ years of experience.  Experience in food product design, including formulation, ingredient functionality and interaction, sensory analysis, process design, product scale-up, plant testing and commercialization.  Expertise in food texture development and emulsion formulation.  Knowledgeable about the structure/function properties of proteins, starches, hydrocolloids, and how they function in food-related materials is a must as well as background in food industry standards of quality, food safety and USDA/FDA regulations.

This hands on, organized, motivated, creative, and results-oriented individual will have had experience managing a team of scientists with a track record of keeping teams inspired.  Candidate must have a minimum Ph.D in Food Science or related field with 10+ years of product development experience in a food and/or food ingredient company or M.S. with 12+ years of experience or B.S. with 15+ years of experience and 5+ years of experience managing a team of scientists.  Deep Experience in food product design, including formulation, ingredient functionality and interaction, sensory analysis, product scale-up, plant testing and commercialization along with expertise in proteins, fats, hydrocolloids, flavorants, colorants, and nutrients including economics, sourcing, and structure-function understanding.  Must have prior experience in development of plant-based meat or fish products.  Experienced in the protection of intellectual property through IP strategy development with knowledge of food industry standards of quality, food safety and USDA/FDA regulations.

Are you looking to get involved in the next big thing?  Here is your opportunity to be part of an Entrepreneurial Start-up Company.  Located in Chicago, they are seeking a Principal Scientist.  The Principal Scientist will be hands-on developing new products, working with customers on product applications, building external relationships with science and technology solution providers, and staying abreast of new/competitive technologies.  Candidate must have a minimum B.S degree in Food Science or related field with 10+ years of experience working in Research & Development in the Food and/or Ingredient industry developing new products from concept to commercialization.  Prior experience working with Plant Based Proteins or Hydrocolloids is a must along with knowledge of quality systems, food safety and an understanding of federal and government agencies (FDA, USDA, GRAS submissions).  Understanding of the economics of the food industry to focus efforts onto commercially viable projects highly desirable along with experience with “first of its kind” technology.
